Ingredients

  • 1 cup Mariani dried prunes
  • 1 cup rolled oats
  • 1/4 cup unsweetened cocoa powder
  • 1/3 cup maple syrup
  • 1/4 cup sunflower seed butter
  • 1 tsp vanilla extract
  • Pinch of salt
  • Sunflower seeds or pumpkin seeds for added crunch

Instructions

  • In a large bowl, combine the chopped Mariani dried prunes, rolled oats, and cocoa powder.
  • Heat the sunflower seed butter and maple syrup in a small saucepan over low heat. Stir often until melted and combined. Remove from heat and stir in the vanilla extract and a pinch of salt.
  • Pour the warm wet ingredients over the dry ingredients in the bowl and mix well until the ingredients are thoroughly combined and the mixture sticks together.
  • Line an 8x8 inch square baking pan with parchment paper and press the mixture evenly into the pan. sprinkle with sunflower seeds or pumpkin seeds.
  • Place the pan in the refrigerator and let the mixture set for at least 1 hour, until firm.
  • Remove the set mixture from the pan using the parchment paper, and cut into squares or bars. Keep the squares in an airtight container in the refrigerator.
