Thai Mango Noodle Salad

Servings Per Recipe: 3-4

For the Noodles:
1 package rice noodles, cooked and chilled
1 package Organic by Mariani Dried Mangoes, thinly sliced
1 red bell pepper, thinly sliced
1 orange bell pepper, thinly sliced
1 cup red cabbage, thinly sliced
1 pound shrimp, cooked
Fresh mint, chopped, to garnish
Roasted cashews, chopped, to garnish

For the sauce:
4 tablespoon soy sauce
3 tablespoons cilantro, chopped
1 tablespoon sesame oil
Juice of 1 lime
2 teaspoons fresh ginger paste
1 teaspoon sugar
½ teaspoon fish sauce
1 clove garlic
¼ teaspoon chili flakes


1. Place noodles in a large bowl. Gently fold in Organic by Mariani Dried Mangoes, bell peppers, cabbage and shrimp.
2. In a small bowl, whisk ingredients for sauce until combined. Toss with noodles and refrigerate for 30 minutes.
3. Place noodles on a serving plate and garnish with mint, roasted cashews and Organic by Mariani Dried Mangoes.
