Sweet Potatoes with Cranberries & Walnuts


4 large sweet potatoes

1 cup chopped Mariani Dried Cranberries

1/2 cup packed brown sugar

2 Tablespoons melted butter

1/2 cup orange juice

For the Topping:

1/2 cup chopped walnuts

1/4 cup packed brown sugar

1/2 teaspoon cinnamon

3 tablespoons cold butter


  1. Place sweet potatoes into a large pan and cover with water. Bring to a boil. Reduce heat; cover and simmer until tender, 20-30 minutes. Drain. When cool, peel sweet potatoes and cut into 1/4 “ slices.
  2. Layer half of the sweet potatoes in a greased 2 1/2 quart baking dish. Top with 1/2 cup chopped Mariani Dried Cranberries, 1/4 cup brown sugar, and 1 tablespoon melted butter.  Repeat layer of sweet potatoes with the remainder of cranberries, brown sugar and melted butter.
  3. Pour orange juice over sweet potato mixture . 
  4. Cover and bake at 350°F for 30 minutes.
  5. In a small bowl combine the topping ingredients: chopped walnuts, brown sugar, cinnamon, and cold butter, cut into small pea size pieces.
  6. Sprinkle over sweet potato mixture. Bake until golden brown about 10 minutes.
