Plum Cake


1 cup Pitted Dried Prunes

1 cup sugar

1/2 cup butter

2 eggs

3/4 cup thick sour cream

2 tablespoons water

1 1/2 cups flour

1 teaspoon cinnamon

1/2 teaspoon cloves

2 teaspoons baking powder

1 1/2 tablespoons corn starch

1/2-3/4 cup walnuts


Grease and flour bundt pan.  Preheat oven to 350 degrees.

Cut the dried plums into thirds.  Place the dried plums in a saucepan, cover with water.  Bring to boil, cover and simmer for 10 minutes.  Place aside and let cool.

Cream eggs, sugar, and butter in a large bowl.  Add sour cream and water.  In a separate bowl, mix all remaining dry ingredients (flour, cinnamon, cloves, baking powder, and corn starch) and combine with the creamed mixture.  Add walnuts and dried plums.  Mix well.  Spread into pan.  Bake 40-45 minutes.

Dust with powdered sugar if desired.
