Apricot Bars


2 cups Mariani California Apricots

1/2 cup firm margarine or butter

1/2 cup granulated sugar

2 1/2 cups all-purpose baking mix

2 cups packed brown sugar

4 eggs, beaten

2/3 cup all purpose baking mix

1 teaspoon vanilla

1 cup chopped nuts

Powdered sugar


Preheat oven to 350° F

Place apricots in a 2 quart saucepan, add enough water to cover. Heat to boiling, reduce heat. Simmer uncovered for 10 minutes. Cool, chop and set aside.

Cut butter into granulated sugar and 2 1/2 cups all purpose baking mix until crumbly. Pat into an un-greased jellyroll pan, 15 1/2 x 10 1/2 x 1 inch. Bake 10 minutes. Beat brown sugar and eggs. Stir in apricots, 2/3 cup all purpose baking mix, vanilla and nuts. Spread over baked layer. Bake 30 minutes longer. Cool completely. Cut into 1 x 2-inch bars. Roll in powdered sugar.

Yields 75 bars.
