Preheat oven to 400 degrees
Melt butter in large non-stick skillet over medium-high heat. Stir in onion, bell pepper and celery; cook 5 minutes, stirring frequently. Stir in kielbasa, corn, pepper and seasoning packets from stuffing mix. Add required water (from stuffing mix directions) and simmer according to directions on box. Pour vegetable mixture over corn bread stuffing mix, stirring well. Stir in plums, parsley and beaten egg. Toss well. Spoon into a 13 x 9-inch baking dish coated with cooking spray.
Cover and bake for 15 minutes. Uncover and bake an additional 15 minutes or until browned.
