Chicken Salad – Brazilian Style


4-5 cups of Chicken Breast (cooked, shredded chicken)
1 cup of canned (drained) or fresh corn
1 cup of chopped celery
Cilantro (couple leaves – to taste)
½ cup of Mariani Raisins
1 cup of table cream (drained)
Salt to taste
Potato sticks (for decoration)


1. The chicken breast can be cooked any way you like, but a preferred method is with onions, garlic, salt and a little bit of olive oil. The chicken must be shredded for this recipe. Rotisserie chicken can be a good option too.

2. Toss together all the ingredients in a bowl and mix them gently. Refrigerate.

3. Add the Potato sticks on top to serve. You can serve it as a salad or make it a slider by adding it to toasts or buns.

This recipe can vary from each family tradition or Brazilian region, some people add carrots, chopped apples or peas.
