11 ounces spaghetti
2 tablespoons olive oil
2 onions, sliced 1/3 cup Mariani Raisins
1 cup chicken stock
1/2 cup Parmesan, grated
1/3 cup walnuts, chopped
Small bunch flat-leaf parsley, finely chopped
Cook the pasta in boiling water, following pack instructions. Meanwhile, heat the oil in a frying pan and cook the onions until soft and golden brown, about 8-10 minutes. Add the raisins and stock and cook for 2-3 minutes until hot through. Toss with the pasta, Parmesan, walnuts and parsley.
