1. For the fish body: using kitchen scissors, cut a slit to open up the dried apricot and place the pretzel into the apricot.
2. For the fish eyes: place a dot of cream cheese on the other end of the apricot and press a piece of the chocolate chip into the cream cheese for the eye.
3. For the fish mouth: cut a tiny mouth under the eye with the kitchen scissors. Arrange the fish on a blue platter and serve.
