4 Sweet Potatoes
4 tablespoons extra virgin olive oil
1/2 cup brown sugar, firmly packed
1/2 cup pecans, coarsely chopped
1/4 cup Mariani Cranberries
1/4 cup Mariani Raisins
1. Preheat oven to 400 degrees F.
2. With a fork, pierce sweet potato skin 5-6 times.
3. Place on baking sheet lined with foil. Bake until tender, 45 minutes to 1 hour.
4. Use a saucepan over medium heat to combine olive oil, brown sugar, pecans, cranberries and raisins. Stir constantly until warm. Drizzle over sweet potatoes.
