1. Melt the chocolate in a double broiler on the stove. Spread the melted chocolate into a large rectangle on parchment paper to the thickness of a chocolate bar. Sprinkle the Mariani Chopped Apricots, Mariani Dried Cranberries, and cashews while the chocolate is still melted. Let the chocolate harden at room temperature.
2. Break the chocolate bark into squares, place them onto one half of each graham cracker sheet. Place the marshmallow on the chocolate and let the marshmallow and chocolate melt in the microwave. Serve immediately.
