Apricot Pumpkin Bread

Ingredients

  • 1-1/2 cups canned pumpkin
  • 1 cup sugar
  • 1 cup oil
  • 3 eggs
  • 2-1/4 cups all-purpose flour
  • 1-1/2 tsp. baking powder
  • 1-1/2 tsp. baking soda
  • 3/4 tsp. nutmeg
  • 3/4 tsp. salt
  • 2 packages (4-3/4 ounces each) instant vanilla pudding
  • 1-1/2 cups chopped Mariani Apricots
  • 1-1/3 cups chopped walnuts

Directions

Combine pumpkin, sugar, and oil.  Mix to blend.  Beat in eggs.  Combine flour, baking soda, baking powder and spices and add to pumpkin mix.  Mix in pudding mix, apricots and nuts.  Pour into 2 greased 8-1/2 x 4 1/2-inch loaf pans.

Bake 1 hour at 350 degrees F.  Cool for 10 minutes and remove from pans.

Makes 2 loaves.
